For our Cabernet Sauvignon, we ferment the crushed grapes at a maximum of 26 degrees to extract gentle tannins. A combination of steel and oak aging yields a well-structured wine with fruity aromas, mild notes of toffee, almonds and vanilla and a long finish.
For our Red Blend, we individually process our organic Cabernet Sauvignon, Carménère and Syrah grapes, then ferment and age them in steel with contact with oak to yield a fruity, juicy wine with notes of chocolate, vanilla and toffee with a long finish.
Slow, low temperature fermentation starts off our Sauvignon Blanc. It is then aged in steel over its fine lees for four months. The wine is elegant in the nose with citrus and tropical aromas. On the palate it is refreshingly acidic and has a well-balanced finish.
The grapes for our intense Rosé are night-picked and quickly pressed for just a blush of color. Low-temperature fermentation in steel tanks yields a fresh wine with notes of raspberries, cherries and a touch of grapefruit. It is juicy and subtly herbaceous with a pleasant finish.
